There’s a Java security update for Mac, but unexpectedly it looks to me like Apple is not pushing it through the normal software update channel. I hope I’m mistaken, because otherwise that’s a truly terrible precedent. I had to download it manually from the URL below.

No idea. I have issues with Java all the time … especially Apple breaking javaws every time it updates. But I usually do get the updates …
Usually Java 7 on Mac (Oracle Java that is) will turn off the Apple Java impl – could be this also disables the relevant updates. Just make sure to disable Java in your browser and also get an on-demand plugin loader like http://hoyois.github.io/safariextensions/clicktoplugin/
